Mier’s CC License

Mier aims to be as transparent as possible. We operate under a Creative Commons license and encourage Mate fans to try our recipes and create their own.

All of the Mier recipes and labels are under the CC 3.0 license.

Mier tastes best with Meta Mate, we cannot vouch for other brands of Mate.  We do, however, request those wishing to produce Mier commercially to contact us regarding a contract. A small percentage from sales on an industrial level would make a significant difference to our small budget!

So, without further delay here are the secrets from our Master Brewer Thorsten Schoppe  and Brasilian Brewer Pedro Kaltbach

Mier as a Mixed Drink – Mier 13.0 & 15.0

Recipe for 100L

Cook 1kg Mate in 5 litres water for 1 hour

This will result in 1,5L extract that should be filtered with a normal sieve.

Mix the Mate extract with 100 litres of your preferred beer.

Beer basis used in Berlin:  Schoppe Braeu Hell

MIER 9.0 & 10.0 – The current Berliner

Recipe for 600 L

Malt Bill:

25 kg Munich malt type 1

75 kg Pilsener malt

20 kg Cara Red

10 Kg Melanoidin

5 kg Wheat light

Mash in at 56 °C 5 min rest

heat up to 63 °C 30 min rest

heat up to 72 °C 20 min rest

lautering up to 12,5 % extract

boiling 60 min

if boiling starts add 15 IBU bitterhops ( H.Herkules) and 6 kg META MATE

after 60 min add another 1 kg of smoked META MATE for the aroma

boil up to 13 % final gravitiy

ferment with bottom fermenting yeast ( VLB strain RH ) at 15 °C until fermentation stops.

store at lowest temp possible for at least 2 more weeks

dry hop with 1000 gr cascade hop pellets

MIER 8.0 and current recipe in Brasil

A minha receita para 230 litros:

 30kg malte pilsen

10,5kg malte munich 30 EBC

5,5 kg m caramelo 60 EBC

4kg m melanoidina 40 EBC

2kg m de trigo claro 4 EBC

Brassagem:

56 °C 5 min

63 °C 30 min

72 °C 20 min

  50g de lúpulo H. Herkules para 10 IBU

2,3 kg de de erva por 1 hora

230g de erva por 10 min

Densidade inicial de 1.056g/l

Fermento S – 23

Fermentação 15ºC

Dry hopping: 300g de Cascade

 MIER 6.0 IPA Aromatized Mier

600 Litres Mier

 Malt Bill:

25 kg Munich malt type 2

    We use the CC license and publish our recipes on the blog to share the knowledge special to people who like to brew DIY. The reason of the NC is that we are trying a decentralized build up of Mier and we prefer to make sure that the quality offered to consumers are according to our standards. We are not from software or hardware field but as long as we do not offer the name Mier as open-source, but as CC NC to protect the Name and also consumer. In this way they know what they are getting when purchasing such a drink. Regarding democracy, we did use a democratic concept including a liquid democratic tool in the beginning to define the taste of the Mier we offer in Berlin as well as of the first brews in Brazil. We strongly recommend the same to be done whenever the Mier is produced in other areas so that the taste would be adjusted to the local public. Other than TM Coca Cola that tastes always different we would appreciate it to give the voice to the local consumers.Cheers and Prost auf Mier!

    Halo, how much is 6kg Meta Mate and 1kg smoked Meta Mate. I would like to brew it in Czech rep. for amouth 600l. Thank you. Tom

      Hi Tom, Dear Tom,
      just to inform you two exciting news:

      1) THere is Mate bier being brewed in Prag. Please check our mier.metamate.cc for details.
      2) We got our Mate over container, so the cost is much lower.

      If you like us to put you in touch with Jiri, the brewer in Prag let us know. We are planning some media adverstising over the net and different tastes can help promote this category.

      In case you are still interested, we would advise you not to use the recipy that is on-line but request a tayler made for you so differenciating from the one in use in Prague. We have done 13. different Miers so far so that we could advise you to have the proper Mate and recipy to suit you.

    I am a homebrewer and I’d like to brew beer with mate. The recipe for MIER 9 & 10 says, that the mate is boiled with hops for 60 minutes. I read that in the mate preparation can not be used boiling, but only hot (70-80 °C) water. Does not mate boiling affect negatively the taste of beer?

      Vladan, you are completely right when regarding Mate drinking. Nevertheless for the Mier producing we do boil for one hour. What we loose in nutritional values we gain in caffeine and anti-oxidants.
